SALAD IDEAS
Three Bean Salad
1 15.8 oz can of northern beans, drained
1 15.8 oz can of black beans, drained
1 15.8 oz can of kidney beans, drained
1 8 ¾ oz canned corn, drained
1 2 oz. jar of diced pimiento
1 carrot, chopped
Combine all of the above in a large bowl.
Dressing:
½ cup olive oil
½ cup cider vinegar
1 clove garlic, pressed
½ tsp salt
½ tsp pepper
½ tsp chili powder
Pour dressing over salad and refrigerate. This salad can be refrigerated for up to 4 days.
Yield 5 ½ cups
Corn Salad
2 no. 2 can of kernel corn, drained
2 pimiento, chopped
2 small onions, chopped
2 small green peppers, chopped
2 small cucumbers, chopped
Mix all of the above and then pour 1 cup of French dressing over it, mix well
Yield, 8 servings
MAIN COURSE
Gourmet Burgers
1/3 cup Parmesan cheese
1 4 oz can mushrooms drained
3 tbsp chopped pimiento stuffed olives
2 tbsp chopped onion
2 tbsp chopped green pepper
1 pound ground beef
8 slices of bacon
8 whole wheat buns
Combine mushrooms, olives, onion, green peppers and ground beef. Shape the beef into a 12 in. x 7 in. rectangle on waxed paper. Sprinkle the Parmesan cheese over the top of the beef.
Roll up the beef, starting with the short side. Cut the roll into 8 slices or patties. Wrap a slice of bacon around each slice and secure with a toothpick.
Cook over medium coals on your tailgate grill or grill with the lid open. Cook five minutes on each side.
CARRY ALONG DESSERTS
Lemon Squares
1 box lemon cake
1 stick margarine
3 eggs
8 oz cream cheese
1 box powdered sugar
Nuts
Coconut
Mix the cake mix with the softened margarine. Add 1 egg. Put into a 9 in. x 3 in. pan. Sprinkle with nuts and coconut. Mix the cream cheese, 2 eggs, and powdered sugar. Beat well and spread over the top. Bake at 350 degrees for 35 minutes. Cool and cut into squares. |
